The idea behind Domaine d'Audaux is to take the undervalued and extremely high quality grape, Petit Manseng and make the very best wine possible irrespective of the cost and other economic considerations that confine all commercial grape growers the world over. The Petit Manseng grapes were picked from 2 estates in 2 distinct terroirs which complement each other (Monein grapes bring richness and Lasseube bring freshness). Normal estates can't do this type of blend as they don't have grapes in both regions. The grapes are then hand sorted by the villagers of Audaux, foot trodden then basket pressed. The juice is fermented to dry in oak as above with the occasional battonage.
