These parcels are situated 200 m above sea level caressed by the cooling sea breezes from the Atlantic a few kilometres away. Rainwater is retained in the iron-rich clay and cobble soils which results in low yield and flavour concentration.
No enzymes or yeasts were added to allow spontaneous fermentation to happen. Only 30% was allowed to go through malolactic fermentation and the wine was matured in French oak barrels for 9 months, using 25% new.
Lengthy, but delicate on the finish with great elegance. The poetry of wine.
