Whole bunch pressed and fermented in small batches in a combination of stainless steel and neutral 3rd fill burgundy barrels. The nose is expressive yet restrained, with flavours of ripe pear skin, white peach and a lovely floral lift of hawthorn blossom. On the palate the wine has great texture and a purity of style that shines through with flavours of juicy stone fruits wrapped in a backbone of minerality. A touch of natural CO2 adds freshness on the finish, which is long, focused and dry.
