The grapes were then gently pressed, and the juice fermented slowly at cool temperatures to help the wine retain its vibrant fruit characters and varietal purity.\u003c\/p\u003e\n\u003cp\u003eAt all stages, from fermentation to bottling, it was handled very carefully to help retain a little of its naturally dissolved carbon dioxide. The taste is a zesty fusion of sweet and sour, a wonderfully flavoursome palate, complete with succulent fruit intensity, a rich honeyed mouthfeel, and a rousing whip of acidity.
