Nicolas Cheveau is one of Caviste's favourite producers. His style is one of elegance over exuberance and restraint over flamboyance. This is one of the finer crus in Pouilly Fuisse, considered an unofficial Grand Cru, and Bouthiers is one of the warmer vineyards in the main crucible of the appellation. The wine is generous without being overbearing. The fruit weight is balanced by a core acidity and complex honeyed, melon fruit and ripe peaches. The finish is fabulous and very rich. 13.5%
