2022 False Bay Wild Yeast Chenin Blanc
This Chenin Blanc is crafted by Waterkloof's talented Cellarmaster Nadia Barnard using carefully selected, hand-harvested grapes. Following wild yeast fermentation in stainless steel tanks, the wine was left to rest on lees for a minimum of 10 months before bottling, with no other additives used apart from sulphur for preservation.
Tasting Note: Aromas of bread and herbaceous notes of dried fennel and aniseed lead the nose, backed by a creamy lemon character. This Chenin Blanc boasts great textural complexity, achieved through its protracted wild yeast fermentation.
