2021 IDUN Crépuscule Pinot Noir
The grapes were hand harvested, chilled and 30% was gently whole bunched pressed. They underwent a 3 day maceration before spontaneous fermentation began. Malolactic proceeded in barrels and the wine was left to mature using 30% New French oak barrels for a period of 11 months.
Tasting Note: Brambles, rose petals, ripe cherries, strawberries on the nose. Very light ruby with a brick-red rim. Cola and raspberry. Delicate and integrated. Some acidity present.
