Grapes are hand-harvested and gently pressed using state-of-the-art pneumatic technology. A careful process follows where 80% of the must ferments in stainless steel tanks at cool temperatures, while 20% is nurtured in French oak barrels with frequent lees stirring, adding subtle complexity and texture.
