Winemaking:

Grapes for this blend are hand-harvested. After gentle pneumatic pressing, only the “cœur de cuvée” free-run juice is retained to ensure purity. Following primary fermentation in temperature-controlled stainless steel, the cuvée rests on lees for a minimum of 24 months in bottle, developing a fine mousse and toasty autolytic complexity. Dosage is carefully calibrated at 8 g/L to preserve the wine’s natural acidity and reveal layers of flavour.

Pairing Suggestions:

Begin with smoked salmon canapés or sea bass ceviche, move to roast guinea fowl with a creamy Morel sauce, and finish with lemon-tart mille-feuille.

Tasting Note:

The glass shows a luminous straw-gold; the nose opens with lemon zest, green apple and subtle brioche, then unfurls layers of almond paste, nougat and wet stone. On the palate, it’s bright and precise with crisp Granny Smith apple that gives way to white peach and a chalky finish, the fine bubbles lifting each sip.

Champagne Germar Breton

The Breton family are from the very south of Champagne in the Aube, where the landscape is more Burgundian than classic Champenois.

A little more clay in the chalky soil and a few more sunshine hours give wines that are generous and approachable and, most importantly, affordable.

Modest growers who have produced grapes for centuries but have only made the Champagne wines themselves for roughly forty years. They are finding their feet, and producing wines that cause irritation to the grander names further north.
