2022 Borja Perez Ignios Orígenes Vijariego Negro

£52.00

The Ignios Orígenes Vijariego Negro is a striking red wine made from a rare local variety grown on stony basalt soils. It is a wine of both structure and vibrancy, offering an exciting expression of Tenerife’s volcanic heritage.

Pairing Suggestions:

This wine is excellent with roasted lamb, grilled steak, or slow-cooked pork dishes. Vegetarians will find it pairs beautifully with lentil stews, roasted aubergines, or wild mushroom risotto. Its savoury spice and mineral drive make it highly versatile with richly flavoured dishes.

Tasting Note:

The nose is lifted with notes of wild thyme, pepper, and red berries, supported by a meaty, savoury edge. On the palate, it is medium-bodied, structured, and mineral, with fine tannins and a core of bright, spicy fruit. The finish is long, savoury, and infused with volcanic energy.

Borja Perez

Born into a family with winemaking roots dating back to 1927, Borja Pérez has redefined Tenerife’s wine identity for the modern era. His personal journey began with the creation of Ignios Orígenes in 2011, a range of single-varietal wines crafted exclusively from indigenous Canarian grapes. By 2014, Borja launched Artífice, a project that expanded his philosophy, offering wines that honour both the land and the long tradition of craftsmanship in his region.

What sets Borja apart is his deep respect for nature and his belief that wine should transport the drinker directly to the volcanic soils of Tenerife. Using only minimal sulphur at bottling, avoiding industrial yeasts or additives, and favouring large-format neutral barrels, his approach is designed to let the grapes and place shine through. The result is wines of striking authenticity, combining texture, mineral depth, and volcanic vibrancy.
