In the past 25 years, the cultivation of Assyrtiko has extended from its origin in Santorini to the Greek mainland and Crete. This grape variety is renowned for its resistance to hot, dry conditions, making Crete a perfect growing environment.

Tasting Note: This pale yellow Assyrtiko offers an invigorating amalgam of citrus aromatics, herbal notes of thyme and oregano, and a tantalizingly crisp acidity. A three-month lees aging process affords greater depth and an intriguingly complex texture, ending with a persistent mineral-tinged finish.
