Adria Vini selects Pinot Grigio grapes from hillside vineyards in Provincia di Pavia, where cool nights and clay?limestone soils concentrate flavour. After manual and mechanical harvesting in early September, the grapes are gently pressed, settled, and cool?fermented (16–18 °C) in stainless steel. A brief 3–6?month lees ageing enhances texture before bottling young.
Ancora stands out for its balance of delicate floral notes and bright acidity, an exemplar of northern Italian white at its most inviting and incredible value.
