A wildly unique spirit from California’s St. George Spirits, The Heart Cut #08 is whiskey... but reimagined. Bold and complex, it started life as a sage-infused, hop-heavy IPA, distilled into a malt unlike anything else.

Matured in a fourth-fill cask that’s previously held bourbon, reposado tequila, and Californian ale, it’s a symphony of flavours, with each sip delivering notes from every corner of its eclectic past. 

With just 224 bottles available, this 54% ABV experimental malt is a limited, must-taste adventure!

Distillery Tasting Note: Delicate notes of dried chamomile, ripe stone fruit and juicy mango lead the way, followed by a rich burst of apricot jam. The finish is all toasted brioche and the creamy, caramel-chocolate goodness of Rolo’s.

The Heart Cut is a brand born out of the shared passion of Georgie Bell and Fabrizio Leoni, a husband-and-wife duo deeply rooted in the whisky and cocktails industry. Both Georgie and Fabrizio have dedicated their careers to exploring the world of spirits, spending years traveling the globe, visiting distilleries, and uncovering hidden gems in the whisky and cocktail world. Their love for discovering new drinks and sharing these experiences with others inspired them to create The Heart Cut.

The Heart Cut is an independent bottler that collaborates with distilleries from around the world to release one-off single cask and small batch whiskies. Their mission is to shine a spotlight on both well-known and lesser-known distilleries, introducing enthusiasts to new flavors and experiences. The brand carefully selects casks in collaboration with partner distilleries, with each bottling limited to just a few hundred bottles. These releases tell the story of the people, provenance, and artistry behind the whisky, capturing the essence of each distillery.

The name "The Heart Cut" is derived from the distillation process. During distillation, the spirit is divided into three phases: heads, heart, and tails. The heart cut is the most prized part of the distillation, where the true character of the spirit is captured.
