This Pinot Gris is treated like a red wine to showcase its bold character. Hand-harvested grapes are destemmed and fermented on skins for 22 days, developing its rich colour and depth. Pressed to French oak barrels (3-5 years old), the wine undergoes natural malolactic fermentation in spring and rests on lees for six months. Minimal intervention and traditional techniques highlight the vineyard’s essence in every bottle.

Tasting Note: A vibrant adventure in the glass! Deep salmon hues give way to an alluring bouquet of pink roses, blood orange, quince, and a dash of Campari. On the palate, red berries, toffee apple, and sour plum mingle with savoury notes of black olive, all wrapped in a crisp, dry finish. Fine-grained tannins and a subtle bitterness balance the lifted red fruit, making this wine irresistibly complex and refreshing.
