Today, the Bott-Geyl estate comprises 18 hectares, including 6 Grands Crus, 3 Lieu-Dits and 1 historic Clos. The focus has been on organic and biodynamic winemaking since 2000.

The vintage blend of this cuvée is 50% from 2016, 30% from 2015 and 20% from the 2012 vintage. This wine has spent over 80 months maturing on its lees to create something utterly spectacular.

Tasting Note: On the eye, Straw coloured and a nice amount of tiny bubbles that don’t look angry, but do tip their hat to the quality. On the nose; bright, but with depth. To my nose, a hint of brioche (scant), stone fruit, and possibly a little grapefruit. On my palate, nice acidity, a little minerality, dry, complex, white peach and the feeling that a sprig of rosemary had been wafted in its general direction. - Dan, Overton

Pairing Suggestion:  Tomato and chilli tortilla chips, Camembert and/or Port Salut, a couple of chunks of fresh baguette, and maybe a side of sliced strawberries seasoned with black pepper.
