NV Bodegas Fernando de Castilla Classic Amontillado Sherry
Grapes for this Amontillado are sourced from vineyards on Jerez's famed Albariza soil. Initial picking occurs in early September, after which a Fino is created at 15% alcohol by volume (abv).
After three years of aging under flor yeasts, the fino is re-fortified to 17% abv and moved to an Amontillado Solera, which is exposed to air rather than flor. This solera aging process continues for approximately five years.
Tasting Note: This classic Amontillado presents a brilliant, shining amber hue and a complex bouquet of raisin, nut, and tangy aromas. Its flavour profile is rich and multifaceted, with layers of delectable nuances.
