‘Sator’ is the flagship wine from Azienda Agricola Cianfagna and a masterclass in the potential of Tintilia, Molise’s native red grape. Produced only from *mostofiore* - the finest free-run juice before any pressing - this wine delivers both purity and concentration. It’s a bold, elegant expression, ideal for lovers of distinctive Italian reds seeking something off the beaten path.

This 100% Tintilia was fermented and matured using traditional techniques, free from artificial intervention. Farming is fully organic, with no irrigation, and minimal sulphites are used, well below organic certification levels. The result is a rich, authentic wine true to its terroir.

Pairing Suggestions: Pairs beautifully with roast lamb, slow-cooked venison, mushroom risotto, or smoky aubergine parmigiana.

Tasting Note: Warm and full on the palate, offering deep black cherry, wild blackberry and a touch of dried herbs. The texture is enveloping, with supple tannins and a long, balanced finish driven by ripe fruit and gentle spice.

Azienda Agricola Cianfagna

Rooted in the hills of Molise since 1860, Azienda Agricola Cianfagna is a family-run estate driven by quiet innovation and deep generational respect for the land. Under the leadership of agronomist Vincenzo Cianfagna, the winery has built a reputation for crafting genuine, characterful wines from estate-grown fruit, with a focus on the rare and native Tintilia grape. Every detail - from canopy management to harvest - is overseen by the family, making each bottle a labour of love and a statement of identity.

Located 500 metres above sea level near Acquaviva Collecroce, the vineyards are blessed with wide diurnal ranges, consistent breezes and clay-rich soils. The family works sustainably, applying only sulphur and copper in the vineyard and avoiding irrigation. Minimal intervention and traditional methods guide the winemaking, with sulphite levels kept lower than even organic standards. The result is a range of honest wines with soul and substance, led by Tintilia del Molise, the beating heart of their land.</p>
