Winemaking for Cabanè begins with hand-harvested grapes fermented in temperature-controlled stainless steel tanks at 28–30 °C for 12–15 days. Malolactic fermentation follows at 20 °C before the wine undergoes extended aging in the family’s cellar, where it develops intense toasted and spicy notes from careful oak maturation.
