The single barrel of 2017 spent 6 months in the used barrel.
An evolved, beautiful balance of honeyed and preserved lemon and grapefruit, entangled with more complex notes of cloves, quince, and a certain nuttiness – coconut perhaps. Seamlessly integrated oak. Richer, smoky notes of vanilla, brioche and butter croissants and a rounder mouthfeel are kept balanced by searing acidity.
