2025 Apostolidi Assyrtiko Agia Triada Single Vineyard
Agia Triada is a single vineyard planted in 2005. A closed basin at an altitude of 80–120 m. Facing southeast and with sandy coral soils of calcareous limestone soil from the sea. The intense temperature difference between day and night allows the grapes to mature slowly and gives cool, elegant wines with spicy and saline notes.
Hand-picking of the grapes, followed by meticulous selection at the winery, destemming, crushing and pressing. Settling of the juice followed by spontaneous wild alcoholic fermentation. Five months ageing on the fine lees with frequent stirring - 60% in stainless steel, 20% in untoasted German oak barrels (1250 litres) and 20% in amphora.
Tasting Note: A very elegant, fresh and crisp Assyrtiko with fine acidity, notes of orange blossom, jasmine, ginger, alongside pronounced and long lasting minerality.
