Scilly Spirit Island Gin is crafted with ethically sourced botanicals steeped for 48 hours, allowing the flavours to fully infuse. After distillation, the gin is rested for five weeks, letting the flavours meld into a smooth, rounded spirit that truly captures the heart of Scilly.

For the perfect serve, enjoy a large measure of Island Gin over ice, garnished with a fresh kaffir lime leaf and dried orange slice, topped with tonic.

Tasting Note: Island Gin is a masterpiece of flavours. On the nose, it offers a delightful balance of piney juniper, piquant cardamom, zesty orange, herbal lime leaf, and warm notes of cassia. The palate is rich and rounded, with soft citrus and juniper taking the lead, followed by layers of fennel, fruity pepper, and subtle spices. Pepper and cardamom’s savoury tones harmonise with the sweetness of orange and fennel, while a hint of kaffir lime leaves a crisp, refreshing finish that beckons you for another sip.

Scilly Spirit

In 2018, Hilary had the incredible vision of establishing a distillery on St Mary's, Isles of Scilly, her family's beloved home for over 60 years. This picturesque archipelago, renowned for its stunning vistas and tight-knit community, held a deep significance for her. It's where her grandmother lived to nearly 102, and where her parents' love story began. Many of her relatives were involved in various local enterprises, including hotels, restaurants, and guest houses, and were dedicated members of the ambulance service and church.

With such entrenched roots in Scilly, Hilary and her husband Arthur rose to the challenge of creating something truly representative of this extraordinary place: Scilly Spirit Island Gin.

Drawing on Arthur's three decades of experience in the beverage industry and Hilary's lifelong commitment to hospitality, they were ideally equipped to undertake the art of distillation. After completing iStill University training and exploring a variety of botanicals, they embarked on their gin-making journey.
