Winemaking:

Each variety is hand-harvested, destemmed and fermented separately. Following malolactic conversion, the components mature in French oak barrels - 40% new - for 20 months. Final blending and gentle fining precede bottling to preserve the wine’s natural vibrancy.

Serve alongside herb-crusted rib of beef or braised lamb shoulder with fennel and orange. For dessert, dark chocolate fondant with cocoa sorbet highlights its rich blackcurrant and spice profile.
