The 2021 Pèppoli Chianti Classico is a lively and expressive red wine that beautifully captures the essence of the Chianti region. Crafted primarily from Sangiovese grapes, complemented by other local varieties, this wine is celebrated for its vibrant fruitiness and delicate floral aromas, offering an authentic taste of Tuscany.

The winemaking process for Pèppoli is meticulous, ensuring the full expression of the Chianti Classico terroir. Each grape variety is harvested separately, carefully destemmed, and gently crushed before undergoing fermentation in stainless steel tanks. The fermentation is controlled at temperatures between 26 and 28 °C (80–82 °F) to enhance the aromatic compounds and preserve the fruity and floral notes. Maceration is performed over 10-12 days for the Sangiovese and up to two weeks for the complementary varieties, extracting soft, supple tannins.

After fermentation, the wine undergoes malolactic fermentation, further softening the tannins and adding complexity. Aged in large Slavonian oak barrels, with a small portion aged in barriques and stainless steel vats, before being blended and bottled.
