The 2015 Pegasus Bay Pinot Noir is a masterclass in balance, purity, and complexity. Winemaking:

Traditional Burgundian methods guided the creation of this wine. Fruit was harvested in small parcels at peak ripeness, with around a quarter fermented as whole bunches to enhance structure and spice. Natural fermentation took place in open vats with gentle hand plunging to extract fine tannins. After fermentation, the young wine was macerated on skins for added depth before being pressed and transferred to French oak barriques, 40% of which were new. The wine matured for 22 months, underwent natural malolactic fermentation, and was carefully blended to achieve balance and complexity.

This Pinot Noir pairs beautifully with roast duck, venison, or lamb, while also complementing mushroom risotto, truffle pasta, and roasted root vegetables.

Tasting Note:

Aromas of raspberry, pomegranate, and cherry are lifted by clove and pepper, with savoury notes of grilled game and olive tapenade. The palate is concentrated yet fresh, with fine-grained tannins and a long, mineral finish.
