Winemaking:

Grapes are harvested by hand at optimal ripeness and immediately pressed. The clarified must undergoes a cool, three-week fermentation in stainless steel tanks to preserve fresh fruit character. After fermentation, the young wine matures on its fine lees for five months, enhancing mouthfeel and imparting subtle brioche nuances, a silky texture, taut acidity and a long, mineral-driven finish.
