A Biodynamic White of Purity and Poise

Le Soula Blanc 2019 captures the wild energy of the Fenouillèdes hills, where granite soils and cool mountain breezes shape one of the most distinctive white wines of southern France. This biodynamic blend reflects a unique sense of altitude and balance, bringing together freshness, depth, and aromatic complexity in every sip.

This limited-production cuvée, crafted from low-yielding old vines, combines Vermentino, Sauvignon Blanc, Grenache Blanc, Marsanne, and Roussanne. Each contributes its own voice to a wine defined by mineral precision and gentle texture.

Winemaking:

Le Soula Blanc 2019 is produced from organically and biodynamically farmed vineyards between 350 and 600 metres above sea level. The grapes, all hand-harvested, are pressed as whole clusters and fermented using only native yeasts. The wine then matures for 22 months in a mix of demi-muids, 228-litre barriques, and large oak foudres, achieving a fine balance between texture and freshness. No fining is used, and filtration is minimal before bottling to preserve natural character.

Pairing Suggestions:

Superb with roast chicken and lemon, grilled sea bass with herbs, or a creamy risotto with wild mushrooms and parmesan shavings.

Tasting Note:

Elegant and layered, with aromas of white peach, fennel, and crushed stone. The palate is textural yet taut, finishing long with saline minerality and gentle spice.
