Organic grapes are harvested in the dead of night when temperatures are cold and acidity is at its highest. A cool fermentation is followed by 4-5 months on lees, adding texture and weight to the wine.

Tasting Note: Refreshing and aromatic with stacks of stone fruits, lime, and kiwi and a distinct "mineraliness". Insanely drinkable!
