The most exciting research project Torres are currently involved in is the recovery of ancestral grape varieties. Miguel A. Torres began it in the early 1980s with the aim of discovering vines that had survived the phylloxera epidemic that devastated European vineyards at the end of the 19th century. Today, the fifth generation is driving this project forward with the ambition of crafting unique wines from forgotten varieties that are sure to move you. These are small oenological gems that also stand out for their resistance to drought and high temperatures, making them especially interesting in the current climate. Of the more than 50 varieties recovered to date, six focus our attention, such as Gonfaus, from which this single-varietal wine of very limited production is made.
