The malolactic fermentation takes place in new French barrels. Aged for 24 months in 5 new French oak barrels. After bottling, it remains in the cellar for at least 11 months.
2021 Clos de Lom Casa las Monjas
Clos de Lôm owes its origins to Frenchman S. Dupuy De Lôme. In 1836, he founded the property, where he decided to use his knowledge of wines and French winemaking tradition.
This 3.9 hectare parcel of Monastrell was planted in 1978. At 570 meters of altitude, it’s characterized by its clay-limestone soils and a strictly non-irrigated goblet vines.
Tasting Note: On the nose you find ripe black fruit, smoke, sweet spices and aromatic herbs. The palate is delicious, deep, with lovely round hint of chocolate and a bright acidity.
Pairing Suggestion: Nice pairing with lamb, rabbit, small game meat. Also goat's cheese and cheese with a slightly smoke note.
