2022 Perusini Cabernet Franc
Vinification takes place in stainless steel using selected yeasts. The fermentation temperature is around 26° C. During the maceration period of about 18 days, frequent punch-downs and delestage are carried out to extract colour and aromas. At the end of alcoholic fermentation, the wine is kept in stainless steel where it also undergoes malolactic fermentation; it then ages for one year before bottling. In this case, only stainless steel aging is preferred to preserve the characteristic varietal aroma of this wine.
Tasting Note: Characterised by a very spicy nose with typical vegetal and balsamic varietal notes. It has a balanced structure with good sapidity and acidity. It is worked exclusively in stainless steel to maintain its fresh characteristics. Ideal for pairing with game and mushrooms.
