Crisio is produced in the vineyards of Serra de’ Conti area, next to CasalFarneto Wine Estate.

A peculiar feature is that harvesting occurs in three different times within the same year, with different production methods per parcel.

- First is slightly early to protect the fresh, zesty citrus acidity of the grapes and fermented in small barrels to develop the distinct almond flavour.
- Second, the bulk of the grapes are picked at full ripeness and offer the “backbone” of the flavour profile, soft stone fruit and delicate summer florals.
- The final stage of the harvest comes slightly late. The remaining grapes are slightly shrivelled and have lost some of their water while retaining their sugars to add texture, richness and body.

Tasting Note: All in all we have a fantastic finished product of fresh acidity, ripe fruit flavours and developing background notes of blossom, minerality and waxy lemon rind. It can be drunk now with fish dishes - amazing with Pasta Vongole - but given a bit of bottle age it has enough structure and body to stand up to something more robust such as barbecued chicken with lemon and thyme.
