The direct orientation of the Probstey to the south - with gradients of up to 25% and its low location of 120 to 170 above sea level - is a guarantee for top wines.

The soil is characterised by clay marl, limestone, and yellow sea sand. Due to the controlled growth on barren soil, particularly small and highly aromatic grapes ripen on the oldest Sylvaner vines until the harvest.

After a very late selective pick, the berries were lightly crushed in the cellar and left to stand in their juice for 8 hours to achieve better aroma extraction. The wine fermentation took place spontaneously in 500 litre oak barrel tonneaux and in traditional barrels with natural yeasts from the vineyard. After 10 months of full yeast storage, bottling took place in August 2023.
