Hand-harvesting of the Cortese grapes typically occurs in mid-September at Nuovo Quadro's single vineyard site, which is graced with chalky mineral soils at the base of the Battistina hill. The grapes are then delicately crushed before being subjected to temperature-controlled fermentation in small stainless steel tanks. Subsequent contact with the lees can last up to 6 months prior to the fining, filtering and bottling of the wine.
Tasting Note: Aromas of citrus and pear with undertones of lime are fresh and delicate. The palate showcases zesty, ripe stone fruit and vivid acidity, balanced with mineral nuances. The finish is exquisite, lingering with a pleasant hint of saltiness.
