Hand harvested, transferred across a sorting table, both bunches and berries to remove any green material. The Cabernet is destemmed and then crushed into the half-tonne open fermenters. Hand plunged twice daily with some extended time on skins to soften the Cabernet tannins.

Maturation in French Bordeaux shaped barrels; only 15% new oak to enhance the juicy fruit palate and immediate enjoyment.

Tasting Note: This wine is characterised by a perfume-like fragrance of lifted bramble and redcurrant fruits. The brightness of fruit flavours, such as cranberry, mulberries, and blueberries, is complemented by the freshness of nettle and the dance of tannins and clove spices. The Malbec adds a vibrant energy and a satisfying crunch to the wine.
