These last couple of sunny days have got my Springtime senses tingling.

They’re slowly growing longer & (hopefully) warmer, the bulbs are starting to emerge from their subterranean hibernation and so, it feels, am I!

With the turning of the seasons I like to take stock of my personal stores and see what wines will be needed for the coming days.

1x NV Domaine Badoz Crémant du Jura Blanc de Blancs

Every day can be a “fizz” day in our house and I can’t think of such a lovely bottle of sparkling for the money.

Traditional method, the wine undergoes meticulous hand-harvesting, gentle pressing, and secondary fermentation in the bottle before aging on the lees.

Granny Smith apple, lemon zest, toasted brioche, complemented by a creamy palate and vibrant minerality. Clean, crisp, and delightfully refreshing. Full of zesty Spring freshness.

1x 2023 Papagiannakos Assyrtiko

A bit of sunshine always cheers me up after winter and this wine is that: sunshine in a glass!

Assyrtiko is native to Santorini but we’re on the mainland here, just a little East of Athens. The vineyard is very close to the sea, granting it a clean, crisp profile with a prominent salinity reminiscent of Chablis. This crisp but textured beauty can fill the gap of the better known chardonnays.

As well as a comforting citrus high note, there is also supporting acts of minerality and fabulous florals. As the fruit trees and shrubs start to bud and the warming air releases that scent of blossoms, head for an al fresco lunch.

1x 2023 Rusden Chasing Daisies White Blend

A little on the nose with the recommendation here by Christian’s Chasing Daisies is perfect for spring.

This presents Christian's fervour for exploring fresh varietals and vinification techniques fitting for the microclimate of Vine Vale. It is rich on the nose with melon, papaya, honeysuckle, and stone fruits. Weight & texture on the palate with green mango, papaya, honeydew, hints of pineapple and freshly picked garden herbs.

In the next couple of weeks I know I’ll be cooking two of my favourite Spring Time suppers; wild garlic & lemon zest pasta followed by pork and fennel.

1x 2023 Chateau D'Aqueria Tavel Rosé

The all year round rosé!

A firm favourite among the Caviste Team. This is the original rosé and full of flavour and character. This is an absolute must-have for me in spring. Light and refreshing whilst also developed and delicious – it’s prefect.

Crafted from a harmonious blend of six grape varieties, this rosé beautifully balances freshness with depth, thanks to the diverse influences of both red and white grapes.

A spring salad of smoked duck and blood-orange would be a prefect pairing.

1x 2019 IDUN Confession Grenache

Light but well textured, Confession is a vinous exploration of the Bot-River area in the Cape South Coast, South Africa. There’s minimal intervention to produce a unique terroir driven wine. Nothing like its warm climate contemporaries.

Handpicked overnight of which 40% was left whole bunch fermented. Spontaneous fermentation happened in open-top tanks and the wine was matured for 11 months, using 30% new French oak barrels. Rose and cherry with raspberry. Crunchy and fresh with more bright red fruit on the palate. A grippy, saline and moreish finish.

This is the wine to rinse away the wines of winter. Its lively, red fruit driven acidity is nothing if not refreshing and leaves you begging for more!

1x 2017 Niepoort Conciso

“Yeah… but what’s the variety?” Turns out nobody really knows!

Probably based around Baga (already one of my favourite varieties) this field blend is a winner all year round but seasonally perfect with the turning of winter into spring. Gone are the heavy “hug-in-a-glass” or “fireside sippers” from previous emails.

Lighter and more floral than many Portuguese wines, Conciso is Niepoort's interpretation of a fine and elegant Dão wine which shows off the potential and the character of a very old vineyard. This East-facing century-old vineyard grows on the slopes of the Serra da Estrela, in granitic soils and produces some stellar juice.

A deep, rich ruby colour is complemented by a fresh aroma with a hint of ripe fruit. On the palate, this wine boasts a concentrated flavour of fresh fruits and delicate tannins, featuring a perfect balance of acidity.
