Step Into the ‘Mists of Time’
An entirely new wine and a retail exclusive to Caviste (so new that the stock actually arrives with us tomorrow) is this deliciously fresh, sophisticated, and appetising white wine from the mist-covered, high altitude, slopes of the Dolomite mountains in Alto Adige, Northeast Italy.
The vineyards, located between 450-600m above sea level, for the Mist of Time, are steeped in cloud for much of the year. However, during the growing season, while the grapes are ripening to perfection, they are bathed in the pure Alpine sunlight.
The 2022 vintage was marked by drought, reminiscent of the dry summers of 2003 and 2015. Grape ripening progressed rapidly and a dry autumn meant a smooth and early harvest.
The wine was fermented at low temperature in stainless steel tanks and aged for several months on the fine yeast.
Pinot Bianco, Chardonnay | Alto Adige, Italy
A blend of mostly unoaked Pinot Bianco with a touch of Chardonnay. This delectable, citrus fruit, mineral, mild spice, white wine shows a wonderful freshness, precision, and balance.
The stylistic intersection of Albarino, Gavi, Sancerre & Chablis, this astounds and captivates in equal measure.
