Crafted from hand-harvested Palomino grapes, the 2022 vintage was aged for 8 months in large, old wooden barrels (700L). Here, a natural flor yeast layer developed, preserving freshness and creating Sotovelo’s signature complexity. This process, traditionally reserved for fortified sherries, enhances the wine’s minerality and savoury notes. The result is an unfortified wine with a nod to tradition and a bold leap forward in innovation.

Tasting Note: An innovative gem from Andalusia! This white wine bursts with vibrant citrus, crisp green apple, and juicy nectarine. Notes of almond and toasted bread, intertwined with a saline and mineral backbone, deliver complexity with every sip. The low sugar content ensures a crisp, dry finish, while the subtle umami edge makes it a perfect gastronomic partner.
