2023 Thorle Kalk & Kreide
The Cuvée for Kalk & Kreide combines Chardonnay and Pinot Blanc grapes from the best vineyard plots in Saulheim.
The idea here was to create as natural a "white Burgundy" as possible with a long, full yeast, storage and minimal addition of sulphur.
Carefully harvested in stages, the grapes were gently crushed and soaked in their own juice for 6 hours to enhance the aroma. This exquisite Chardonnay & Pinot Blanc underwent spontaneous fermentation with natural yeasts and was aged for around 10 months. Monthly stirring of the yeast added an extra layer of richness and creaminess to this wine.
The maturation process occurred in 500l tonneau wooden barrels and traditional oak barrels with a 30% new wood content.
Tasting Note: On the nose it shows smoky and yeasty with robust features. On the palate it appears opulent and ripe, but is supported by a noticeable, salty minerality. There is also a fine wood spice that rounds off this liquid work of art. In the finish, this top Burgundy cuvée challenges the palate and shows off its creamy, yeasty length.
