A Youthful, Elegant Red

The 2021 Le Soula Rouge Bio expresses the high-altitude vineyards of Fenouillèdes with remarkable freshness and finesse. Crafted from mature Syrah and Carignan vines, with a touch of Sauvignon Blanc, this biodynamic red offers vibrant fruit, bright acidity, and a pure sense of place from the rugged Côtes Catalanes.

Winemaking:

The 2021 vintage comprises 77% Syrah, 22% Carignan, and 1% Sauvignon Blanc, grown on decomposed granite and schist soils at 350–650 metres altitude. Biodynamic viticulture with manual harvesting and careful ploughing preserves the integrity of the fruit. Whole-bunch maceration lasted 8–12 days, fermented with indigenous yeasts, followed by 18 months ageing in demi-muids, foudres, and one month in stainless steel. The wine was clarified lightly before bottling, without fining.

Pairing Suggestions:

Ideal with grilled lamb chops, roasted peppers, or a hearty mushroom and chestnut stew.

Tasting Note:

Bright aromas of red cherry, violet, and subtle spice lead to a juicy palate of raspberry, dark plum, and a long, refreshing mineral finish.

Hidden away in the rugged heights of the Fenouillèdes, Le Soula is one of the great modern success stories of southern France.
