After a thorough selection process, fermentation took place in a combination of small stainless steel vats and traditional stone lagares, where the grapes were foot-trodden for optimal extraction. The wine was then aged for 22 months—60% in French oak barrels and 40% in large 2000-litre oak vats—allowing malolactic fermentation to impart a smooth texture while retaining freshness and acidity.
