Following a lengthy cold extraction to draw out the beneficial compounds from the grapes' skin and seeds, a natural fermentation occurs for several weeks.
After fermentation, a maceration period intensifies the now soft and sweet tannins for enhanced flavours.
The wine is then aged for 48 months in older French Barriques, allowing for a softening and rounding of tannins and acidity without excessive wood tannin extraction.
No fining or filtration is used, only pure and natural methods.
Tasting Note: It boasts a perfect balance and alluring scents of delicate flowers and juicy red fruits. The palate is velvety and succulent, with beautifully refined tannins complementing notes of luscious cherries, earthy truffles, and wild herbs. Savour this delicious wine as it matures, just like a top-notch Barolo.
