The terroir of Domaine de Chevalier is unparalleled, enabling the production of worthwhile wines in less favored vintages; this is achieved through strict selection processes in the vineyard and cellar.

In 1986, a process of planting young vines was initiated, resulting in the creation of their second wines, a red and a white - L'Esprit de Chevalier.

Their approach entails up to five rounds of harvesting to select only the most mature grapes. Vats that go into red Esprit de Chevalier must nevertheless be complex, well-balanced, well-structured, and, above all, elegant enough to be in keeping with Chevalier’s image.

Tasting Note: Layers of spice, vanilla, and tobacco are woven throughout dark berry fruits, with a dash of currants. An earthy, gamey character is developing that will continue with age.
