The Trouble with Dreams 2020 showcases England’s highest-rated sparkling wine in a richly expressive vintage. Crafted from Chardonnay and Pinot Noir across three chalky South Downs sites, it balances fruit generosity with the signature mineral tension that made this cuvée world famous.

With critics lauding its purity and ageing potential, this wine captures a rare Sussex growing season of warm days and cool nights. Its low dosage and precise acidity make it a compelling choice for connoisseurs seeking English sparkle at its finest.

Winemaking: Grapes were hand-harvested in perfect condition and gently pressed; 50% fermented in seasoned Burgundy barrels and 50% in stainless steel, with no malolactic fermentation. After a long lees-age, it was bottled in July 2021 and disgorged November 2024 at 6g/L dosage.

Pairing Suggestions: Serve alongside Norfolk crab blinis or seared scallops with pea purée. For vegetarians, try it with goat’s cheese and asparagus tartlets or a leek and gruyère quiche.

Tasting Note: Pale gold in colour, it opens with delicate brioche, green apple and lemon zest, leading to a chalky mineral palate underpinned by fine mousse and a crisp, lingering finish.

Dermot Sugrue’s journey from aspiring rock star to England’s most celebrated winemaker began in the unlikeliest of places: a monastic garden at Our Lady of England Priory. With a degree in Environmental Sciences and vintages in Bordeaux under his belt, Dermot planted his first vines there in 2008.
