The winemaking process at Odessos is a labour of love, starting with hand-picked grapes transported in small boxes to ensure they arrive in perfect condition.

At the winery, the grapes are sorted by hand and crushed in small, open-top fermenters. They then enjoy a 7-day cold soak before fermentation begins naturally, maintained at a comfortable 20-22°C. Gentle extraction is achieved through careful pumping over, plunging, and pigeage.

Post-fermentation, the young wine rests in Bulgarian oak barrels for 8 months, followed by another 8 months in stainless steel tanks, allowing the oak aromas to beautifully integrate. All wines are crafted with minimal intervention, so a fine sediment might make an appearance.

Tasting Note: Expect a medium intensity, bright ruby hue that catches the eye. This Cabernet Franc boasts typical herbal aromas of peppers, enriched with cherry, blackcurrant, and a hint of cocoa. An elegant, medium body, that's fresh and juicy. There's a delightful balance between density and acidity, with distinctive notes of ripe cherries, chocolate, and light spices. The finish is impressively long and fresh..
