Viticulture practices prioritise sustainability; herbicides have been eschewed in our vineyards since 2000, replaced by hill cultivation techniques in the winter and ploughing in spring. Hand-harvesting is also employed.
Fermentation for three to four weeks occurred traditionally in tank. Aging was conducted in French oak barrels from the Forêt de Troncet for 14-18 months, of which 40% were new and 60% were single-wine barrels.
Tasting Note: Boasting a powerful profile, a lush ruby hue, and fragrant kirsch aromas, this Gevrey-Chambertin 'En Champs' is further distinguished by its remarkable minerality. Upon tasting, the palate gradually reveals nuances of spice.
