2021 Catherine et Claude Marechal Pommard Chaniere (Magnum)

The winemaking process combines tradition with meticulous care. Grapes are handpicked at peak ripeness, hand-sorted, and gently de-stemmed before undergoing fermentation with native yeasts. The must is pumped over twice daily, extracting the rich colour and structure for which Pommard is famed. The wine is then matured in oak barrels (10–25% new) for 10 to 15 months before being bottled unfiltered, preserving its authenticity.
Pairing Suggestions: Gamey pâté, wild boar, duck confit, steak in red wine, or rich mushroom dishes.
Tasting Note: Deep, intense aromas of red berries, musk, and game meat. The palate is robust and structured with bold tannins, gradually softening into a velvety, long finish.
