This Chablis 1er Cru Fourchaume from the Fèvre family captures the very essence of Kimmeridgian limestone, its long sun-facing slopes fattening each grape with ripeness and mineral vibrancy.

Perfect for those seeking a pure and refined Chardonnay, it offers a harmonious blend of green-apple fruit, sea-salt freshness and mouthwatering flint. A wine to savour now or cellar for 3-5 years.

Winemaking: Whole-cluster pressing and slow fermentation in temperature-controlled stainless steel preserve varietal purity. The wine then matures on fine lees for at least 12 months before gentle filtration and bottling.

Pairing Suggestions: Ideal with cooked oysters, white-fish fillets in a beurre blanc, the Burgundian classic jambon au Chablis, or mildly spiced curry dishes.

Tasting Note: The nose shows lemon zest, green pear and wet stone. On the palate, crisp orchard fruit and chalky minerality lead to a refreshing, saline finish with subtle floral undertones.

Domaine Nathalie et Gilles Fevre

The Fèvre name has been woven into Chablis soil since 1745, but it was Gilles’ great-grandfather Marcel who first saw the future potential of these Kimmeridgian hills. Over the 20th century, successive generations acquired parcels in Grand and Premier Cru sites, transforming a modest family holding into a tapestry of top-flight vineyard land. Today Gilles and his wife Nathalie, both trained oenologists, carry forward this heritage with a light touch, intervening only when necessary to let each plot’s famed minerality and elegance shine through.

Their daughter Julie has joined the domaine with fresh agronomic insights from Bordeaux and beyond, while son Martin lends support from his engineering studies in the USA. Between Nathalie’s gravity-flow cellar and Gilles’ sustainable-viticulture programme (HVE Level 3 certified), the Fèvres balance tradition and innovation. The result is a portfolio of Chablis that combine purity, precision and the warm hospitality of a true family estate.
