2022 Hattingley Entice Dessert Wine

The question is "how do you make dessert wine in England and the very short answer is, ‘With difficulty’.

This really is a labour of love for the team at Hattingley.

We never allow rot to form in our dessert wines; instead, we harvest the grapes at a higher-than-usual sugar ripeness and then store 4 tonnes of Bacchus grapes in our walk-in freezer for two weeks at -10C. Once the regular harvest is complete, we carefully extract the juice from the frozen grapes in our press.

Only possible to make in the most outstanding vintages; 2022 was an exceptional year for English wine. 

Tasting Note: Pale lemon-hued in hue, Entice Dessert Wine reveals vibrant fragrances of balmy fruits and petals. Notable hints of elderflower and lemon grace the taste buds along with a delightful nectarous personality and plush texture. Its tart acidity artfully counterbalances the wine's inherent sugary quality emanating from the Bacchus grapes, culminating in a clean, refined and invigorating finish.

Hattingley Valley

From its birth as a farm diversification project back in 2008, Hattingley has grown to become one of the leading wineries in the UK, based in rural Hampshire (just down the round from Caviste!).

The Robinson family made their initial steps in 2008 by planting the first vineyard on some of the farmland, but had no idea that it would lead to where it has, today.

Now, their site has a purpose-built, eco-friendly winery, that was constructed under the guidance of their Head Winemaker and Director, Emma Rice.

They are serious - and seriously good - winemakers, but they love to have a little fun , so expect the unexpected, embrace the unconventional, throw off the shackles of tradition and try the remarkable wines of Hattingley Valley.
