This is an utterly groundbreaking wine, hailing from Balbaina in El Puerto de Santa Maria, Jerez. Made from 100% Palomino grapes, this wine begins its life in a very similar fashion to that of a Fino Sherry.

It is aged for 8 months under a layer of “flor”, which is a natural covering of yeasts, in wooden barrels.

Ethan's One-Liner: This wine is effectively an unfortified Fino Sherry in all but name. It is utterly remarkable. In fact, if you have ever found yourself searching for the perfect wine to enjoy a glass (or two) of whilst cooking some glorious seafood. Look no further. You have found it!

Tasting Note: The aromas are spellbinding. Notes of almond, toasted bread, salt, minerality, citrus, green apple, nectarine all appear in no particular order, before reaching a perfectly crisp and precise crescendo.
