2025 Pierre Antonin Pet Nat Vigne Sauvage
Vidoc is a pioneering disease-resistant grape variety, born from a natural cross between a classic European Vitis Vinifera — prized for its winemaking qualities — and the hardy American Vitis Rupestris, which offers natural resistance to powdery and downy mildew. The result is a vine that requires up to 15 times fewer treatments than conventional organic farming, dramatically reducing energy use, water consumption, and labour. It means a significantly lower carbon footprint — and a wine grown with a genuine commitment to the land.
After gently pressing the destemmed grapes, fermentation begins in stainless steel vats using indigenous yeasts, without the addition of any additives. When the perfect balance is achieved, the wine is bottled with enough residual sugar to allow for natural secondary fermentation in the bottle. Undegorged, undosed and with no added sulfites, it retains its lees in suspension, giving it a slightly cloudy texture and a unique aromatic richness. Its pale pink color with a slight haze is evidence of its lively and authentic production.
Pairing Suggestions: Melon and cured ham salad, yuzu-marinated shrimp, fried gyoza.
Tasting Note: Its delicate nose reveals aromas of wild strawberries and red berries. On the palate, its fine, delicate bubbles highlight a soft, refreshing texture. A true delight, this naturally sparkling wine is best enjoyed well chilled. Like all living wines, it continues to evolve in the bottle and may develop a slight deposit.
